Cheesy Beef Taco Bake

Ingredients

1 lb (450 g) ground beef

6 small flour tortillas

2 cups shredded cheddar or Mexican-blend cheese

1 ½ cups chunky salsa

1 small onion, diced

1 teaspoon taco seasoning

½ teaspoon garlic powder

½ teaspoon smoked paprika

Salt and black pepper to taste

1 tablespoon olive oil

How to Make

Preheat the oven to 375°F (190°C).

Heat olive oil in a skillet and cook the diced onion for 2–3 minutes.

Add the ground beef and cook until browned. Drain excess grease.

Stir in taco seasoning, garlic powder, paprika, salt, pepper, and about 1 cup of salsa. Cook for another 2 minutes.

Spoon some beef mixture onto each tortilla, sprinkle with cheese, then fold the tortillas in half.

Spread the remaining salsa over the bottom of a baking dish and arrange the folded tortillas on top.

Spoon any remaining beef and salsa around the tortillas.

Cover generously with the remaining shredded cheese.

Bake for 15–20 minutes, until the cheese is melted, bubbly, and golden.

Serve hot with sour cream, guacamole, or fresh cilantro if desired.
