These rich chocolate cake bars are layered with a gooey coconut-pecan filling and creamy chocolate topping. They’re an easy crowd-pleasing dessert for holidays, parties, or family gatherings.
Ingredients
Chocolate Cake Layer
1 box chocolate cake mix
3 large eggs
½ cup vegetable oil
1 cup milk
Coconut Pecan Layer
1 cup evaporated milk
¾ cup granulated sugar
3 egg yolks
½ cup butter
1 teaspoon vanilla extract
1 cup sweetened shredded coconut
¾ cup chopped pecans
Chocolate Topping
1½ cups semi-sweet chocolate chips
½ cup heavy cream
½ cup chopped pecans
How to Make
Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Mix the chocolate cake mix, eggs, oil, and milk until smooth. Spread into the prepared dish.
Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let cool.
For the coconut layer, combine evaporated milk, sugar, egg yolks, and butter in a saucepan. Cook over medium-low heat, stirring constantly, until thickened.
Remove from heat and stir in vanilla, coconut, and pecans. Let cool slightly, then spread evenly over the chocolate cake.
Heat the heavy cream until hot, then pour it over the chocolate chips. Let stand for 2 minutes and stir until smooth.
Spread the chocolate topping over the coconut-pecan layer and sprinkle with chopped pecans.
Refrigerate until the layers are set, then slice into squares and serve.
